Some Clean Eating Summer recipes and one that is a Freak

Today I made my favorite soup so I could feel really virtuous.. plus it is really easy and good..You take 1 cup chopped onions and I Tbs of olive oil and a liitle vegetable oil.. Cook on medium heat until onions slightly tender.. 3 or 4 minutes.. Then add 1 lb of fresh asparagus(yes your pee will smell funny)trimmed and cut in 1 inch pieces.. add 28-29 ounces of chicken broth and I small baking potato,peeled and cubed.. Bring to a boil and cook about 15 min until everything is tender.. When done stir in some baby spinach.. I use a lot to feel really healthy.. Then puree in blender until smooth.. I only season with black pepper.. lately I have added some frozen English peas also.. If you are going to go for the veggies Go FOR IT!.. It makes a about 5 servings.. Do not finish meal with trip to the Cheesecake Factory..Then my favorite is Squash Casserole.. You take 3 lbs of yellow squash.. Cut the squash into 1/4 inch slices.. Take 1/2 cup chopeed sweet onion..Place in Dutch oven with water to just cover.... add I teaspoon salt..Preheat oven to 350.Stir together 1 10/34 ounce reduced fat cream of chicken soup( I personally prefer Cream of Celery) 1 8 oz.. container light sour creram... 1/4 cup chopped fresh chives(optional)Let your squash and onion boil until tender(maybe 5 minutes, maybe longer)Drain water from squash and onions.. I then mash up with potato masher... Then mix in sour cream and soup mixture.. Stir stir.. Then take 1/2 cup crushed cornflakes 2 tbsp. of melted butter and !/2 cup crushed French fried onions( do not believe that is all the French Fried onions I use.. I love those puppies.. Pour into greased baking dish and top with French Fried mixture.. Bake 30 to 35 minutes until bubbly.. Last 20 -25 might need to cover with foil to prevent overbrowning...I made this recipe last summer to take camping in the Smokies for the KIDS.. It is easy and freezes well.. The Kids liked it fine, but the ADULTS were all over it.. Yes, I know how truly gross it sounds,but try.. Brown 1 lb ground chuck.. Forget onion, garlic, all your fancy seasonings Drain well. Cook I box spaghetti.. Drain.. Take I can Campbells Cream of Tomato and 1 can Campbell"s Cream of Mushroom (Yes I know how it sounds)And mix all together and pour in Casserole dish.. Top with an Obscene amount of Mozzarella cheese.. bake at 350 until cheese melts.. I now have a blog.. It is at blogger.. I think this is the address ..
