Some Healthy Summer Eating and A real Freak of a recipe..

I just made my favorite summer soup when I want to feel full of VIRTUE.. Also it is very good..You take 1 Tbs of olive oil and a little vegetable oil or butter in a medium saucepan.. Add I/2 cup of chopped sweet onions and cook until tender 3-4 minutes.. add 28 ounces of chicken broth and 1 lb of trimmed fresh asparagus cut in 1 inch pieces.. Add also I russet(small potato, peeled and cubed.. Boil over medium heat until all cooked through.. 15 minutes approx.. Then remove from heat and add baby spinach..(I use a bunch to feel really really healthy) Yes, your pee will smell funny from the asparagus.. Then puree in blender until smooth and GREEN!!!!!! Pour back in pan.. I only season with pepper.. Lately I have been adding frozen English peas...I mean Veggies Rule! Do not complete this meal with a trip to the Cheese cake Factory for more green Their Key Lime pie is not a veggie... Next summer favorite is Squash casserole.. preheat oven to 350.. Grease casserole with Pam(VIRTUE WHENEVER) Take 3 lbs of yellow squash and cut in 1/4 " pieces.. Take I/2 cup chopped sweet onion.. Put in Dutch oven with water just to cover .. Boil until tender.. Drain... Mash some with potato masher.. Take 1 10 3/4 oz can of cream of chicken soup.. ( I prefer Cream of Celery) mix with 8oz carton of reduced fat sour cream.. Then mix squash and this mixture.. Top with 1/2 cup crushed cornflakes and 2 teaspoons of butter and 1/2 cup of French fried onions.. Do not believe for a second I only use 1/2 cup of the onions.. I love those things.. Bake for 30 minutes.. Cover at 20 minutes to prevent over browning... Last summer I made this recipe for a camping trip in the Smokies for the KIDS.. It is a real weirdo but it freezes well and is beyond easy. Brown 1 lb ground chuck.. Forget garlic, onion, fancy seasoning just PLAIN.. Drain well.. Cook I package plain spaghetti.. Take 1 can Campbell's tomato soup and 1 can Campbell's Cream of Mushroom( Yes, I am well aware how GROSS this combination sounds..) Mix it together .. Pour in casserole dish.. Top with Obscene amount of Mozzarella cheese bake at 350 until cheese melts.. Well, the kids were fine with, but all the adults were like "WE love this" Please can we have the recipe.. I told them there is no recipe.. Just throw this mess together.. It really is excellent, and I have no clue why that odd combo works.. I am now blogging daily on www.blogger.com.. Check it out
